May I ask if I can ever sing with just one vocal chord left to me after surgery to remove my thyroid?

I’m sorry to hear about your vocal cord problems after surgery. Of course, I am not an ENT expert, but the bottom line is that if you can speak then you can sing. Most people already have quite a range of tones in their speaking voice; singing just exaggerates these, lengthening the amount of time we sit on each pitch. I suggest you start with gentle humming – something simple like a lullaby or spiritual or folk song. Good luck!
